A treat in monsoons with these hot delicious noodles served in mushroom sauce!!!
🔷 Preparation Time: 20 mins 🔷 Cooking Time: 15 mins 🔷 Total Time: 35 mins
🔷 Ingredients
• 200 gms whole wheat noodles
• 300 gms chopped mushrooms (khumbh)
• 1 tbsp olive oil
• 3 bay leaves
• 2 onions , chopped
• 1 1/4 tbsp garlic (lehsun) paste
• 1 cup tomato puree
• 2 tsp freshly ground black pepper powder
• 2 tsp carom seeds (ajwain)
• 1 tsp mustard (rai / sarson) paste
• 2 tsp tomato ketchup
• 1 tsp sugar
• 1 cup soaked and chopped Mayur soya nuggets
• 1 tbsp tamarind (imli) paste
• 2 tbsp grated processed cheese
• salt to taste
🔷 Method
1. Soak the noodles in boiling water, drain and immerse in cold water.
2. Add 1/2 tbsp olive oil, mix well and keep aside.
3. Soak soya chunks in boiling water for 10 minutes, drain and keep aside.
4. Heat the remaining olive oil in a pan, add the bay leaves. Saute.
5. Add the garlic paste and onions and saute for some time.
6. Add the tomato puree. Mix well and saute for some time.
7. Add the pepper powder, bishop’s weed, mustard paste, mix well and saute for 2 minutes.
8. Add the tomato sauce, sugar, mushrooms and soya chunks and salt and mix well.
9. Add the tamarind paste along with 1 cup water and add to the above mixture.
10. When the mixture starts boiling and becomes thick, remove and discard the bay leaves.
11. Spread the noodles on a plate and pour the gravy over it and spread the cheese on the top.
12. Serve hot.
